Banana Cake / Loaf Recipe

This delicious banana loaf is perfect if you are looking for something to make whilst in lockdown.  It goes perfectly with a cup of coffee in the morning. 



Ingredients 

  • 140g butter 
  • 140g caster sugar 
  • 140g self-rising flour 
  • 2 eggs 
  • 1tsp baking powder 
  • 2 very ripe bananas (mashed)
You'll also need a baking tin and some greaseproof / baking paper.

Method 

  1. Preheat the oven to 160 degrees or gas mark 4 and line the tin with the baking paper. A tip to get the paper to stick, is to rub some butter on the tin. Leave a bit of paper sticking out at the top so that you can use this to pull the cake out once it's done;
  2. Melt the butter, you can do this by either putting it in the microwave or putting it into a bowl and putting the bowl over a pot of boiling water. 
  3. Cream the butter and sugar together;
  4. Add the eggs and some of the flour and mix;
  5. add in the rest of the flour and the baking powder, together with the mashed bananas;
  6. pour the mixture into the tin and bake for around 30 minutes, double check with a skewer and there you have it.

  1. Oh yum, this looks so good! I'm going to be making some banana bread soon I think - I bought some brown bananas and put them in the freezer! My son used to love my mum's banana bread she would bring when she visited but since we can't do that now with isolation I'm going to try make my own!
