BRITISH PRIMARY SCHOOL CAKE RECIPE

Today I wanted to share my recipe for this old school cake/tray bake that was served when I was in primary school in the early 2000's.  This cake was always served with custard at lunchtime and the taste and scent are so nostalgic to me.  Although this definitely wouldn't be served today, I'm certain that many people in the UK will remember this. 


Ingredients 


  • 300g unsalted butter
  • 300g caster sugar
  • 300g self raising flour 
  • 4 large eggs
  • 80 ml milk
  • Sprinkles 
  • 1tsp vanilla essence
  • 300g icing sugar + 6tbs milk 

If you don't have self raising flour then you can use normal flour and just add 4-5tsp of baking powder. 

You will also need a baking tray that is roughly 30 x 20cm and some baking / greaseproof paper. An electric whisk would be ideal but not essential. 

Method 

  1. Preheat the oven to 160°C or Gas Mark 3 and line your baking tray with the baking paper. Rub some butter on the tray to get the paper to stick;
  2. Mix together the butter and sugar until smooth. Add the eggs one by one and mix well. This will work best with super soft, room temperature butter but don't worry if you need to melt it in the microwave or on the stove;
  3. Add in the flour a little bit at a time in order to ensure the mixture is smooth;
  4. Add in the milk and vanilla essence and mix;
  5. Get your prepared tray and pour in the mixture;
  6. Bake for around 30 minutes or until golden brown;
  7. in the meantime, you can make the icing by mixing together the milk and icing sugar. The more milk you add, the runnier it will be, so it is up to you how you prefer it. 
  8. Spread the icing over the top of the cake once it has cooled down and then add the sprinkles! 
Let me know if you remember this cake or if you plan on trying out the recipe. Also feel free to half all of the ingredients if you want to make a smaller tray.

    I also remember the iced buns which were just bread rolls with bits of icing on top, haha.
