I recently made this sweet potato and chickpea curry and considering that it was my first ever attempt at making it I was really happy with the results. It was quite simple to make and tasted amazing so I thought I would share the recipe.

Traditional chocolate chip cookie recipe

These delicious cookies are the perfect treat to have at home or give to a friend. Once lockdown is over these will also be amazing to have on offer for guests with a cup of tea or coffee. They have very few ingredients and although they are a treat, they will definitely be healthier than most packaged, ready-made biscuits. You'll find the ingredients, method and some photos of the process below. 

These are also fun, quick and simple to make and perfect to practice your baking skills.

Isolation thoughts and walks

I've been trying my best to focus on the positive aspects of this lockdown, so I thought I would share some of my thoughts. I'm also going to share some of the photos that I've taken on my walks, since one of the positives is that I have been walking and exploring a lot more. It has been both amazing and eerie to see parts of Edinburgh that are normally very busy with tourists, completely still and empty. 

A big part of me believes that this is probably the most quiet my life is going to be until retirement and, as much as I love living life by going to the gym, going for food and drinks, going shopping and importantly spending time with family and friends, I know that sooner or later I will be doing all of those things again. This time in isolation is such a short period of time in the grand scheme of things and I'm therefore trying to appreciate and accept the present moment.

BRITISH PRIMARY SCHOOL CAKE RECIPE

Today I wanted to share my recipe for this old school cake / tray bake that I used to get with my primary school lunches in the 90's and early 2000's. It used to be served with custard and the taste and smell are so nostalgic. I definitely don't think this would be served today, although I am certain that many people in the UK will remember this.

QUICK AND EASY PIZZA RECIPE

Today I thought I would share this super quick and easy pizza recipe. This is perfect if you are looking to have a slightly healthier pizza, without wanting to spend lots of time and money. It has so few ingredients, which you are likely to already have at home. Plus it tastes and smells amazing. It is also delicious the next day.

Today I wanted to share some more beautiful photos from my daily isolation walk around my area. I would highly recommend visiting Dean Village to anyone who is planning a trip to Edinburgh. Although it is central, it feels as though it is somewhere far outside the city centre. It is also the perfect spot for running.

THINGS TO DO / PLACES TO SEE IN MALTA

Last year I went on holiday to Malta and I thought I would share a few of the places that I visited and also some of the places I didn't and the reasons why. I wanted to share this because before I went I tried to research some of the best places to visit and I could't find any super helpful reviews that were perfect for a short holiday (I was only going for a week). After doing a lot of digging online I had a few ideas. 

I know many people may prefer not to plan and just see what happens, but as we were going for such a short time, I wanted to have a few places in mind so that we didn't end up accidentally wasting a few days being uncertain about where we should go. I'm also completely not an expert and there will be countless places and activities that I missed out on but this was just my experience and it might be helpful for anyone else who's looking to visit for a short amount of time.

Evening Walk in Stockbridge, Edinburgh

Today was the first day that I have ever worked from home. I don't feel as though one day was enough for me to form an entire opinion but one thing I was certain about was that I needed to move my body.

Normally I walk roughly 30-40 minutes a day simply by walking to and from work. This was something I dreaded when I first moved flat in December because of all of storms but now, as it's getting lighter, it has become a part of my day that I enjoy (when I'm not running late). During my ideal morning I can take my time walking and the sun is shining directly on me whilst I listen to music. So far these mornings have still been few and far between but I'm hopeful for summer.
